As part of the Master of Architecture program, we are invited for a semester in Florence. I’d love to go. LOVE to go. But it comes with hefty fees, as private education goes, which asks that I embark on alternative methods of generating funds.

PRIMO LOTTO: Ginger Cupcakes
It’s a good day to be lemon frosting
I’ve always wanted to candy ginger
I used fresh ginger for these cupcakes (not powdered) I find that it makes a nice mellower flavor, with just a hint of spice. I must have used a huge chunk of root though, to get the flavor present. It was grated, infused with the fats in the batter, then strained because I don’t like fibery-cupcakes.
The candying process produced a good amount of ginger syrup, which I further reduced and spread on top of the cupcake before adding the frosting. Topped with white chocolate!
